Camping Soup Recipe
A Hearty and Easy Soup for Outdoor Adventures
Soup is a comforting and practical choice when camping, especially when you want something quick, nourishing, and warming after a day of outdoor activities. This recipe uses simple ingredients and minimal equipment, making it ideal for preparing over a campfire or portable stove.
Camping soup is highly customisable, allowing you to use whatever vegetables or tinned goods you have to hand. It’s simple, filling, and perfect for sharing around the campfire.
Ingredients
- 1 tablespoon vegetable oil or butter
- 1 onion, finely chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 2 potatoes, peeled and diced
- 1 tin (400g) chopped tomatoes
- 1 tin (400g) mixed beans, drained
- 1 litre vegetable or chicken stock (from cubes is fine)
- 1 teaspoon dried mixed herbs
- Salt and pepper to taste
- Optional: 100g pasta shapes or rice for extra body
- Optional: handful of spinach or kale
Equipment
- Large saucepan or pot
- Wooden spoon
- Knife and chopping board
- Camping stove or campfire
Method:
- Heat the oil or butter in a large saucepan over your camping stove or campfire.
- Add the chopped onion, carrots, and celery. Fry gently for 5 minutes until beginning to soften.
- Add the diced potatoes and cook for another couple of minutes, stirring occasionally.
- Pour in the tinned tomatoes and stock. Stir in the mixed herbs, salt, and pepper.
- Bring the soup to a gentle boil, then reduce the heat and simmer for about 15 minutes, or until the vegetables are tender.
- Add the drained beans and, if using, the pasta or rice. Cook for a further 10 minutes, until everything is cooked through.
- If using greens (spinach or kale), stir them in for the last 2 minutes of cooking.
- Taste and adjust the seasoning as needed. Serve hot in bowls or mugs, ideally with some crusty bread.
