Easy Campfire Chilli

This hearty chilli is perfect for cooking on a camping trip—simple ingredients, minimal fuss, and plenty of flavour.

You’ll need:

  • 500g minced beef (or vegetarian mince)
  • 1 onion, chopped
  • 1 red pepper, diced
  • 2 cloves garlic, crushed
  • 1 tin chopped tomatoes
  • 1 tin kidney beans, drained
  • 1 tbsp tomato purée
  • 2 tsp mild chilli powder (more if you like it hot!)
  • 1 tsp ground cumin
  • Salt and pepper, to taste

Method:

  1. Heat a splash of olive oil in a large pot over your campfire or camping stove. Add the onion, pepper, and garlic, and fry until softened.
  2. Add the minced beef and cook until browned all over.
  3. Stir in the chilli powder and cumin, then add the tomato purée, chopped tomatoes, and kidney beans.
  4. Season with salt and pepper. Let the chilli simmer gently for 20–30 minutes, stirring occasionally. Add a splash of water if it gets too thick.
  5. Serve hot in bowls, with crusty bread or over rice if you have it. To keep it simple we like it with nachos. Enjoy under the stars!
