Easy Campfire Chilli
This hearty chilli is perfect for cooking on a camping trip—simple ingredients, minimal fuss, and plenty of flavour.
You’ll need:
- 500g minced beef (or vegetarian mince)
- 1 onion, chopped
- 1 red pepper, diced
- 2 cloves garlic, crushed
- 1 tin chopped tomatoes
- 1 tin kidney beans, drained
- 1 tbsp tomato purée
- 2 tsp mild chilli powder (more if you like it hot!)
- 1 tsp ground cumin
- Salt and pepper, to taste
- Olive oil
Method:
- Heat a splash of olive oil in a large pot over your campfire or camping stove. Add the onion, pepper, and garlic, and fry until softened.
- Add the minced beef and cook until browned all over.
- Stir in the chilli powder and cumin, then add the tomato purée, chopped tomatoes, and kidney beans.
- Season with salt and pepper. Let the chilli simmer gently for 20–30 minutes, stirring occasionally. Add a splash of water if it gets too thick.
- Serve hot in bowls, with crusty bread or over rice if you have it. To keep it simple we like it with nachos. Enjoy under the stars!
